Ingredients

3 cups short-grain white rice
4 dried shiitake mushrooms
2 cups konbu dashi
1 tablespoon konbu dashi
3 tablespoons sake
100 g chicken breasts
1 sheet thin deep- fried tofu
100 g carrots
2 tablespoons Kikkoman soy sauce
1/3 teaspoon salt
40 g green peas ( fresh , froze or canned )

Instructions

1.Rinse the short-grain white rice and soak in water for 20 minutes.

3.In a pot, add the konbu dashi, sake, and 1 tablespoon of soy sauce and bring to a boil.
4.Add the chicken breasts and cook for 2 minutes. Remove from the heat and let cool.
5.Drain the shiitake mushrooms and cut them into thin slices.
6.Cut the thin deep-fried tofu into small pieces.
7.Cut the carrots into small pieces.
8.In a rice cooker, add the rice and the konbu dashi mixture from step 3.
9.Add the shiitake mushrooms, thin deep-fried tofu, carrots, and green peas to the rice cooker and mix well.
10.Cook the rice according to the rice cooker instructions.
11.Once the rice is cooked, add 2 tablespoons of soy sauce and 1/3 teaspoon of salt to the rice and mix well.
