Ingredients

1 cup dashi
2 tablespoons sugar
2 tablespoons mirin
1/2 cup miso ( I used 1/4 C red miso and 1/4 C white miso )
2 teaspoons cornstarch
1/4 teaspoon white pepper ( optional )
4 small Japanese eggplants , cut in half lengthwise ( or 2 Chinese or Italian eggplants )
vegetable oil , for brushing
sesame seeds

Instructions

1.In a small saucepan, bring the dashi, sugar, and mirin to a boil over high heat.
2.Reduce heat to low and stir in the miso paste. Cook, stirring constantly, for 5 minutes.
3.Dissolve cornstarch in 1 tablespoon of water and add to miso mixture. Stir until the mixture thickens.
4.Preheat oven to broil.
5.Brush the eggplant halves with vegetable oil and place cut-side down on a baking sheet.
6.Broil for 3-4 minutes, until lightly browned. Remove from oven and turn the eggplant halves over.
7.Spread the miso sauce on the cut side of each eggplant half.
8.Broil for an additional 2-3 minutes, or until the edges of the eggplant become crispy.
9.Garnish with sesame seeds and serve hot.
