Ingredients

2 1/2 lbs chicken thigh meat , ground
1 1/4 lbs pork , ground
10 ounces beef , ground
5 ounces panko Japanese-style bread crumbs ( kikkoman brand is recommended )
1/3 cup sake
1/3 cup tamari soy sauce
1/3 cup green onion , chopped
3 shiitake mushroom caps , dried , soaked , stemmed and minced
2 1/2 tablespoons ginger juice
2 1/2 tablespoons mirin
1 tablespoon shiso leaves or 1 tablespoon basil leaves , chopped
2 1/2 teaspoons salt
2 1/2 teaspoons sugar
1 1/4 teaspoons red pepper seasoning ( Ichimi , Japanese red pepper )
1 kombu seaweed
1 gln water
24 bamboo skewers
1 1/2 cups soy sauce ( kikkoman is recommended )
1 1/2 cups mirin
3/4 cup sake
3/4 cup sugar
1 1/2 tablespoons yuzu juice or 1 1/2 tablespoons tangerine juice
Tsukune is a popular Japanese dish made with meatballs that are seasoned with different spices and sauces. Instructions

1.Soak 24 bamboo skewers in water for at least 1 hour.
2.In a large bowl, mix together ground chicken, pork, beef, panko bread crumbs, sake, tamari soy sauce, green onion, shiitake mushrooms, ginger juice, mirin, shiso or basil leaves, salt, sugar, and red pepper seasoning until well combined.
3.Cover and refrigerate the mixture for about 30 minutes.
4.Wet your hands and form the mixture into small meatballs.
5.Thread 2 to 3 meatballs onto each bamboo skewer.
6.In a large saucepan, combine soy sauce, mirin, sake, sugar, and yuzu or tangerine juice. Bring the mixture to a boil over medium heat, stirring occasionally.
7.Reduce heat and simmer the sauce for about 15 minutes until it thickens.
8.Preheat the grill to medium-high heat.
9.Brush the meatballs with the sauce and grill them, turning frequently, until they are browned on all sides and cooked through.
10.Serve hot with the remaining sauce on the side.
