4 soft-shell crabs , cleaned
1/4 teaspoon salt

Spider rolls are a type of sushi that originated in the United States, inspired by Japanese maki rolls. They're called 'spider rolls' because of the way the cooked soft-shell crab legs look when they're sticking out of the roll. This sushi dish is typically made with rice, nori seaweed, avocado, and soft-shell crab. It's often served with wasabi, pickled ginger, and soy sauce for dipping. Spider rolls are a popular choice at sushi restaurants and can also be made at home with some simple ingredients and a little bit of practice.

Instructions

1.Rinse the rice with cold water and drain well.
2.In a medium saucepan, bring the rice and water to a boil over high heat.
3.Reduce the heat to low and cover the saucepan with a lid. Simmer for 18 minutes.
4.Remove the pan from heat and let the rice rest for 10 minutes. Fluff the rice with a fork and stir in seasoned rice vinegar.
5.Preheat the oven to 425°F. Line a baking sheet with parchment paper.
6.Season the crabs with salt and pepper. Dust with flour and shake off the excess.
7.In a large skillet, melt butter over medium-high heat. Add the crabs and sauté until the shells turn light brown, about 3 minutes per side.
8.Place 1 sheet of nori on a sushi mat, shiny side down. Spoon 1/4 of the rice onto the nori. Gently press the rice to cover the nori, leaving a 1-inch border at the top.
9.Arrange the avocado and green onion over the rice. Sprinkle with sesame seeds.
10.Place a soft-shell crab at the bottom edge of the nori. Roll the mat forward, pressing gently but firmly.
11.Remove the roll from the mat and cut it into 6 pieces.
