Ingredients

12 canned lychees , including juice from the can
1 small fresh pineapple , washed
2 large ripe pears
2 fresh peaches , washed
12 strawberries , washed and chopped
6 small fresh mint sprigs
12 fresh mint sprigs
1 tablespoon instant coffee granules
2 tablespoons boiling water
2/3 cup double cream

Instructions

1.Rinse your fresh pineapples, pears, peaches and strawberries with cold water.
2.Drain the lychees and save the liquid for later use.

5.Mix the canned lychees, fresh pineapples, pears,

7.In a small bowl mix the double cream with six mint sprigs.
8.In another small bowl mix the coffee granules and
9.boiling water until the coffee granules are dissolved.
10.Mix the double cream and coffee together.
11.Pour the coffee and cream mixture over the fruit.
