Ingredients

1 lb raw soba noodles or 1 lb udon noodles
2 lbs raw boneless chicken breasts or 2 lbs boneless chicken thighs , sliced thin
1 tablespoon cornstarch
1 tablespoon toasted sesame oil
2 tablespoons peanut oil
4 cups shredded cabbage
1 tablespoon grated fresh ginger
4 cloves grated fresh garlic
1/2 cup coarsely shredded carrot
6 green onions , cut diagonally in 1-inch lengths
1/2 lb thinly sliced mushroom ( white , shiitake , etc . ok )
1/4 cup peanut oil
1/4 cup Japanese soy sauce
2 tablespoons shiro miso
2 tablespoons cornstarch
1 teaspoon salt
1 tablespoon sugar
1 tablespoon sherry wine
Kosher Yakisoba or Udon is a delicious and healthy recipe that combines lean protein with healthy vegetables and delicious Japanese noodles. Instructions

1.Cook noodles according to package directions, set aside.
2.In a bowl, whisk together cornstarch, and 1 tablespoon of soy sauce to make slurry.
3.Add chicken to the slurry and mix well.
4.In a large skillet over medium-high heat, add peanut and toasted sesame oil.
5.Add chicken and cook, stirring occasionally until browned, about 6 minutes.
6.Add in cabbage, ginger, garlic, mushrooms, and carrots and continue to cook for 2-3 minutes.
7.In a small bowl whisk together 1/4 cup soy sauce, miso, cornstarch, salt, sugar and sherry wine.
8.Add the soy sauce mixture to the pan and stir until everything is coated.
9.Add in the green onions and cook for an additional 2-3 minutes.
10.Divide the noodle evenly between bowls and top with yakisoba mixture. Serve hot.
