Ingredients

1/4 cup finely minced shallot
2 tablespoons finely minced garlic
2 tablespoons finely minced ginger
2 teaspoons wasabi paste
1/2 cup seasoned rice vinegar
2 tablespoons tamari
2 tablespoons light brown sugar ( I use honey )
1/4 cup toasted sesame oil , divided
4 mahi mahi fillets
8 slices ciabatta or 4 rolls , split
2 tablespoons tahini
1 1/2 cups very finely shredded napa cabbage
1 cup very finely shredded red cabbage
1/2 cup grated carrot
1/4 cup chopped green onion

This recipe combines the flavors of spicy wasabi, tangy rice vinegar, and nutty sesame oil to infuse the mahi mahi fillets with bold taste. The napa slaw adds fresh crunch and contrasting flavors of savory tahini and sweet carrot to the sandwich. Instructions

1.Preheat a grill to medium-high heat.
2.In a small bowl, whisk together the minced shallot, garlic, ginger, wasabi paste, rice vinegar, tamari, brown sugar, and 2 tablespoons of the sesame oil until the sugar has dissolved and everything is well combined.
3.Brush the mahi mahi fillets with the remaining sesame oil and place them on the grill. Cook for 4-6 minutes on each side, or until the fish is cooked through.
4.In a separate bowl, whisk together the tahini and enough warm water to thin it out and make it pourable. Add the napa cabbage, red cabbage, carrot, and green onion to a large bowl and toss to combine. Add the tahini mixture and toss until everything is well coated.
5.Toast the ciabatta slices or rolls on the grill, then spread each half with a thin layer of mayonnaise. Place each fillet on the bottom half of a roll or slice of bread, then top with a heaping pile of the napa slaw. Serve immediately.
