4 large eggs
4 tablespoons dashi stock
1 tablespoon sugar
1 teaspoon mirin

Tamago Yaki, also known as sushi omelette or Japanese rolled omelet, is a popular classic Japanese dish that has been enjoyed for centuries. Instructions

1.Beat the eggs in a mixing bowl. Add dashi stock, sugar, mirin, soy sauce, and salt to the eggs. Whisk well until all the ingredients are combined.
2.Preheat a rectangular tamago-yaki pan or any non-stick frying pan on medium heat. Use a paper towel to apply oil to the pan.
3.Pour the egg mixture into the pan. Use chopsticks or a spatula to draw the egg mixture to the center. When the surface is almost set, roll the egg from the front edge to the back edge of the pan.
4.Apply oil to the pan again and pour enough egg mixture to cover the surface of the pan. Lift the cooked egg and let the mixture flow underneath the rolled egg. When the surface is almost set, roll the egg again, starting from the front edge to the back edge.
5.Repeat the process until the egg mixture is finished. Roll the omelet in a bamboo rolling mat to form a rectangular shape. Press the mat gently to shape the omelet.
