Ingredients

1 cup dashi
3 tablespoons shoyu
2 tablespoons mirin ( Japanese Sweet Cooking Wine )
2 tablespoons dried fish flakes ( Katsuobushi )
1/3 cup rice vinegar ( Su , for Soba Zuyu only )
1 tablespoon tangerine zest , skin shaved ( for Soba Zuyu only )
red pepper flakes ( optional )
Soba Tsuyu and Soba Zuyu sauce are classic Japanese sauces used in a variety of dishes. The Soba Tsuyu sauce is a combination of dashi, shoyu, mirin, and dried fish flakes, which lends to its savory and umami flavor. Instructions

1.In a pot over medium heat, combine the dashi, shoyu, mirin, and dried fish flakes. Bring to a boil and simmer for 2-3 minutes.
2.Remove from heat and strain the mixture through a fine-mesh sieve into a bowl. Add red pepper flakes if desired. This is your Soba Tsuyu sauce.
3.For the Soba Zuyu sauce, combine the Soba Tsuyu sauce with the rice vinegar and tangerine zest in a bowl. Stir together until well combined.
4.Serve the Soba Tsuyu sauce and Soba Zuyu sauce with cold soba noodles or use as a dipping sauce for tempura or other dishes.
