2/3 cup dashi stock
2 tablespoons sugar

cucumber , cut into sticks ( optional )

Instructions

1.Soak dried shiitake mushrooms in water for 15 minutes.
2.In a bowl, mix dashi stock, sugar, mirin, and soy sauce. Set aside.
3.Scramble the eggs and cook them into thin sheets.
4.Cut the dried gourd into thin sticks.
5.Cut the rehydrated shiitake mushrooms into thin slices.
6.Lay one sheet of nori shiny-side down on a sushi mat.
7.Wet your hands and spread about 1 cup of sushi rice evenly over the nori, leaving a 1-inch margin at the top edge.
8.Spread the mixed dashi sauce over the rice.
9.Arrange cucumber sticks, shiitake mushroom slices, gourd sticks, and scrambled egg sheets horizontally on top of the rice.
10.Lift the bottom edge of the mat up and over the filling, tucking the filling in tightly. Roll up the sushi, pressing the mat gently.
11.Remove the sushi from the mat, and cut it into bite-size pieces with a sharp and moistened knife.
