Ingredients

1 lb chicken wings

2 tablespoons soy sauce
1 teaspoon sugar
1/4 cup japanese sesame paste ( neri goma )
1 tablespoon japanese sesame paste ( neri goma )
2 teaspoons kosher salt
1 lb fresh ramen noodles or 1 lb frozen ramen noodles
japanese hot chili oil ( Rayu , garnish )
1/4 cup scallion , thinly sliced ( garnish )
Tantanmen, also known as Dan-Dan noodles in some parts of China, is a spicy ramen dish that originated in Japan. Instructions

1.Preheat the oven to 425°F and roast chicken wings on a baking sheet for 45 minutes.
2.In a large pot, bring chicken stock to a boil and add the toasted sesame oil, scallions, ginger, and garlic.
3.Add ground pork, chile bean sauce, soy sauce, sugar, sesame paste, and 1 tsp kosher salt to the pot and let it simmer for 30 minutes.
4.Cook fresh or frozen ramen noodles according to package instructions and divide the noodles among four bowls.
