1 teaspoon extra virgin olive oil
fresh ground black pepper , to taste
1/2 cup bell pepper , chopped into matchsticks ( optional )
1/2 cup cucumber , peeled and chopped into matchsticks ( optional )
6 sheets nori , raw

Instructions

1.In a food processor, combine sunflower seeds, dill weed, sweet onion, celery ribs, tomato, lemon juice, jalapeno pepper, Himalayan salt, extra virgin olive oil, and black pepper.

3.Cut nori sheets in half.
4.Place half of a nori sheet on a plate or a sushi mat, shiny side down.
5.Wet your fingers and spread the mixture onto the nori sheet, leaving about 1 inch at the top of the sheet without the mixture.
6.Place lettuce on top of the mixture.
7.Add bell pepper and cucumber sticks on top of the lettuce.
8.Roll the nori sheet tightly from the bottom to the top, wetting the edges to seal them.
9.Repeat with the remaining nori sheets and filling.
10.Slice the rolls into bite-size pieces and serve.
