Ingredients

200 g cherry blossoms
40 g salt
70 ml ume vinegar or 70 ml liquid , from the cherry blossom juice below
4 tablespoons salt

Instructions

1.Rinse the cherry blossoms well in cold water, removing any dirt or debris.
2.In a bowl, mix together 40g of salt and 70ml of ume vinegar (or 70ml liquid from the cherry blossom juice).
3.Layer the bottom of a container with some of the salt mixture.
4.Add a layer of cherry blossoms on top of the salt mixture.
5.Spread an even layer of the salt mixture over the blossoms.
6.Repeat until all the blossoms have been used up, ending with a layer of the salt mixture on top.
7.Tightly cover the container with a lid or plastic wrap and refrigerate for at least 48 hours.
8.After 48 hours, remove the cherry blossoms from the salt mixture and rinse well in cold water.
9.Serve as a unique and flavorful springtime delicacy!
