Ingredients

1 lb firm tofu
1/2 lb ground pork or 1/2 lb veggie crumbles
1/2 onion
1 inch gingerroot
1 garlic clove
1 tablespoon crushed red pepper flakes
3 tablespoons miso
1 cup water
1/2 teaspoon sugar
2 tablespoons sake
1 teaspoon chicken bouillon granules or 1 teaspoon vegetable bouillon granules , granule
1/2 teaspoon salt
1 tablespoon cornstarch
1 teaspoon sesame oil
1 tablespoon vegetable oil
Mabu Dofu is a popular Chinese Sichuan dish that pairs crispy pork or meatless crumbles with soft, silken tofu in a fiery and flavorful sauce. Hailing from China's southwestern Sichuan province, the dish gets its trademark heat from the use of chili bean paste. This recipe balances the spiciness by adding the subtle sweetness of miso. Mabu Dofu is often found in restaurants as an appetizer or entree. It is a quintessential Chinese comfort food and is enjoyed by foodies worldwide.

Instructions

1.Cut tofu into small 1-inch cubes and set aside.
2.Heat a wok over high heat, and add vegetable oil. When hot, add ground pork and stir-fry until browned.
3.Add chopped onion and ginger to the wok and continue stir-frying for around 2-3 minutes.
4.Add garlic and red pepper flakes, and stir-fry for another minute.
5.Whisk together miso, sugar, water, sake, bouillon granules, and salt in a small bowl and add to the wok.
6.Bring the mixture to a boil, then add tofu and return to a simmer. Cover and simmer for approx. 10 minutes.
7.In a small bowl, mix cornstarch and a tablespoon of water to create a slurry. Add to the wok and stir gently.
8.Smooth in sesame oil before serving. Best enjoyed hot with rice.
