Ingredients

3/4 lb shrimp , peeled and deveined
1 tablespoon cornstarch
1 tablespoon dry sherry
1 large egg white
3 tablespoons tomato ketchup
1/2 teaspoon soy sauce
1 1/2 teaspoons sake
1 teaspoon sugar
2 cups canola oil ( or any neutral oil )
1/4 yellow onion , minced
1/2 teaspoon minced garlic
2 tablespoons peeled and minced fresh ginger
1 teaspoon chili bean paste
2 green onions , including tender green tops , minced , for garnish
2 tablespoons frozen peas ( optional garnish )

Instructions

1.In a small bowl, mix together the cornstarch, sherry, and egg white until smooth.
2.In another bowl, combine the ketchup, soy sauce, sake, and sugar and stir to mix.
3.Heat the oil in a wok or skillet over high heat until hot.
4.Add the shrimp and stir-fry for about 30 seconds or until they turn pink and are cooked through.
5.Remove the shrimp from the wok and drain on paper towels.
6.Remove all but 2 tablespoons of the oil from the wok.
7.Add the onion, garlic, ginger, and chili bean paste and stir-fry for about 30 seconds or until fragrant.
8.Return the shrimp to the wok and stir-fry for another 30 seconds or until heated through.
9.Stir in the tomato sauce and heat through.
10.Transfer the shrimp to a serving dish and garnish with the green onions and frozen peas, if using.
