Ingredients

1 tablespoon brown sugar
2 tablespoons japanese miso ( or Korean toenjang bean paste )
1 teaspoon sesame seeds
8 pieces leaves lettuce leaves
8 pieces basil leaves ( or other fresh herb , such as cilantro )
1 tablespoon olive oil
3 ounces firm tofu , cubed
1/2 avocado , peeled
1/4 red bell pepper , seeded
2 1/2 ounces white radishes , julienned ( or daikon )
2 ounces bean sprouts , raw
2 teaspoons sesame oil
2 teaspoons sesame seeds
2 teaspoons brown sugar
1 1/2 teaspoons salt
1 teaspoon paprika ( or Korean red pepper powder )
2 small cucumbers , peeled and diced

Instructions

1.In a bowl, whisk together brown sugar, miso or toenjang bean paste, sesame seeds, and 2 tablespoons of water to make a sauce.
2.Take 8 lettuce leaves and place basil leaves or other fresh herbs on top of each leaf.
3.In a skillet, heat olive oil over medium-high heat and add tofu cubes. Cook for 3-4 minutes until slightly brown.
4.Cut avocado and red bell pepper into small pieces and place them in a mixing bowl.
5.Add julienned white radishes, raw bean sprouts, sesame oil, sesame seeds, brown sugar, salt, paprika or Korean red pepper powder, and diced cucumbers to the mixing bowl and mix well.
6.Pour the sauce over the cooked tofu cubes and mix.
7.Place tofu mixture on top of the herbs and wrap the lettuce leaves around them. Serve immediately.
