Ingredients

2 cups japanese persimmons , pulp ( kaki , 6 blended persimmons with a little water )
3 cups flour
1 teaspoon salt
2 1/2 teaspoons baking powder
2 teaspoons baking soda
1 1/2 teaspoons ground cinnamon
1 teaspoon ground cardamom
1/8 teaspoon ground cloves
1 1/2 cups sugar
3 large egg whites ( or 3 large egg replacer for 2 eggs )
1 1/4 cups applesauce
1/2 cup raisins
1/2 cup slivered almonds
1 teaspoon vanilla ( can be omitted )

Instructions

1.Preheat oven to 350 degrees F (175 degrees C).
2.In a mixing bowl, combine flour, salt, baking powder, baking soda, cinnamon, cardamom, and cloves. Mix well.
3.In a large bowl, mix sugar and egg whites together until well combined.
4.Add pulped persimmons, applesauce, raisins, almonds, and vanilla extract. Mix well.
5.Gradually add flour mixture to the persimmon mixture, mixing well until all ingredients are evenly distributed.
6.Grease and flour two 9 x 5 inch loaf pans.
7.Divide batter evenly between the two prepared pans.
8.Bake in preheated oven for 60 - 70 minutes or until a toothpick inserted comes out clean.
9.Cool on wire rack for around 30 minutes.
10.Serve and enjoy!
