1 cup short-grain rice ( ~2 Cups cooked )
1 stick mozzarella cheese
1/2 cup soy sauce
1 tablespoon mirin ( optional )
1 sugar cube
2 tablespoons salt
3 cups warm water

Instructions

1.Rinse the rice in a fine mesh sieve and drain well.
2.In a medium pot, add the rice, 3 cups of warm water, and 1 tablespoon of salt, and stir to combine.
3.Bring to a boil over high heat, then reduce the heat to low, cover and cook for 18 minutes.
4.Remove from heat and let sit for 5-10 minutes.
5.In a small pot, add soy sauce, mirin, and sugar. Cook over medium heat until the sugar dissolves.
6.Cut the mozzarella cheese stick into small sticks.
7.With wet hands, take a small amount of rice and shape it into a ball.
8.Make a hole in the rice ball and insert the cheese stick.
9.Cover the cheese with more rice and shape into a triangle or ball with a little pressure.
10.Brush the rice balls with soy sauce mixture and let sit for 5 minutes before serving.
