2 teaspoons salt

2 cups water , salted
1 tablespoon margarine
2 egg yolks

Instructions

1.Boil the rice in salted water for 10 minutes then drain.
2.Mix the rice, beef, onion, salt, pepper and parsley in a bowl. Mix well and knead with your hands until well combined. Form into meatballs.
3.In a large pot, heat the margarine and fry the meatballs for around 10 minutes on medium heat. Add the salted water to the pot.
4.Cover and cook for 20-25 minutes on low heat.
5.While the meatballs are cooking, whisk the egg yolks and lemon juice together in a bowl. Gradually pour 1 cup of the hot cooking liquid into the egg mixture while whisking continuously until the mixture is tempered. Gradually pour the tempered egg mixture into the pot with the meatballs while stirring gently. Cook for another 2-3 minutes.
