2 kg mussels
3/4 cup olive oil
1 cup short-grain rice

2 tablespoons currants
1 lemon

Instructions

1.Rinse the mussels in cold water and remove the beard.
2.In a pan, sauté 3 chopped onions with olive oil until they soften.
3.Add the diced tomatoes, rice, spices, sugar, currants, and 1 cup of water to the pan. Let it cook until the rice is soft and the water has been absorbed.
4.Stuff each mussel with a tablespoon of the mixture and place them in a large pot. Repeat until all the mussels are stuffed.
5.Squeeze fresh lemon juice over the mussels and cover with a lid.
6.Cook on low heat for 30-35 minutes or until the mussels are fully cooked. Serve hot or cold!
