Ingredients

2 cups brown lentils
8 cups water , plus 1/4 cup cold water separated
1 cup spring onion , finny chopped ( green onions )
1 garlic clove , crushed ( optional )
1/4 cup finely chopped flat leaf parsley
1/3 cup olive oil
1 tablespoon rice flour ( regular flour may be used if not gluten free )
1/4 cup red wine vinegar ( not halal )
sea salt , to taste
fresh ground black pepper , to taste
1 lemon , cut in wedges ( to serve )
Fakes Xithati is a traditional Cypriot soup made with lentils and flavored with red wine vinegar. It is a simple and rustic soup that is typically eaten during the winter months as it is hearty and warming. Lentils are a staple in Cypriot cuisine and are used in many other traditional dishes. Instructions

1.Rinse lentils in cold water and put in a pot with 8 cups of water and spring onions. Bring to a boil and lower the heat. Allow to simmer for 30-40 minutes or until lentils are soft.
2.Add garlic (if using), parsley, salt and pepper and continue simmering for another 10-15 minutes.
3.In another pot, mix the flour with 1/4 cup cold water until smooth. Add the olive oil and vinegar and stir well.
4.Gradually add 3-4 ladles of soup to the pot with the flour and stir well until smooth.
5.Pour the mixture back into the pot with the remaining soup and stir well.
6.Allow the soup to cook for another 10-15 minutes until it thickens. Remove from heat and serve with lemon wedges.

PROS

This vegan lentil soup is hearty and filling, making it perfect for a cold winter day.
