Ingredients

1 cup plain yogurt ( regular or Greek cow� s milk yogurt or non-dairy regular or Greek yogurt )
1/4 cup cucumber , finely diced
2 tablespoons fresh dill , chopped
1 tablespoon lime juice ( from a 1/2 lime )
1 garlic clove , grated ( optional )
salt
pepper
2 1/2 cups zucchini
4 tablespoons green onions , chopped
2 tablespoons fresh dill , chopped
2 eggs
4 tablespoons gluten-free flour or 4 tablespoons rice flour
1/2 teaspoon salt
3 ounces feta cheese , crumbled ( I used goat milk feta cheese . )
oil ( for cooking )
Kabak Mücver is a traditional Turkish dish made with zucchini, herbs, flour and eggs. It is crispy on the outside and soft in the inside, a perfect snack or appetizer. This gluten-free version of the recipe replaces regular flour with gluten-free flour or rice flour. The fritters are often served with a yogurt sauce, which compliments the flavors and adds a refreshing taste. The dish is quick and easy to make and can be enjoyed hot or cold on a summer day.

Instructions

1.In a medium bowl, mix together the yogurt, cucumber, dill, lime juice, garlic and a pinch of salt and pepper. Set aside.
2.Grate the zucchini on the large side of a box grater, into a large bowl.
3.Add the green onions, dill, eggs, gluten-free flour or rice flour, salt, and feta cheese.
4.Mix everything together to combine well.
5.Heat a large nonstick skillet over medium heat until hot.
6.Add enough oil to coat the bottom of the skillet.
7.Using a tablespoon or a small cookie scoop, add the mixture into the skillet, flattening each one with a spatula.
8.Cook for 2-3 minutes on each side, or until golden brown.
9.Remove the fritters from the skillet and place them on a plate or paper towel-lined baking sheet to drain any excess oil.
10.Serve hot or cold with the prepared yogurt sauce on the side.
