1 cup boiling water
1 1/2 tablespoons olive oil
1 tablespoon lemon juice
1 cup fresh Italian parsley
1/4 cup fresh mint leaves ( chopped )
1 large roma tomato ( seeded and diced )
2 green onions ( chopped )
1/2 teaspoon salt
black pepper ( to taste )
cayenne pepper ( to taste )
4 teaspoons red pepper paste ( or Ajvar )

Instructions

4.Fluff the bulgur with a fork and add the dressing mixture to the bowl.
5.Add the parsley, mint, tomato, green onions, and 4 teaspoons of red pepper paste to the bowl and mix well.
6.Taste and adjust seasoning if necessary.
7.Cover the bowl and refrigerate for at least 1 hour before serving.
