3 envelopes unflavored gelatin

1 cup water ( add some rose water to make up cup )
1 tablespoon lemons or 1 tablespoon orange juice
1 teaspoon lemons or 1 teaspoon orange rind , grated
food coloring
powdered sugar

Instructions

1.In a large mixing bowl, sprinkle the gelatin on 1/2 cup of water, and let it sit for 5 minutes.
2.In a saucepan, whisk the sugar, salt, and remaining 1/2 cup of water, and bring it to a boil over medium-high heat. Stir occasionally until the sugar dissolves.
3.Add the lemon or orange juice and rind. Simmer the mixture on low heat, without stirring, until it reaches 240°F on a candy thermometer.
4.Stir in the gelatin mixture, and continue cooking until the gelatin is fully dissolved.
5.Pour the mixture into a greased 9x13 inch pan. Add food coloring if desired. Refrigerate for at least 4 hours, or until the mixture is firm to the touch.
6.Dust a large cutting board with powdered sugar, remove the Turkish Delight from the pan, and cut it into small squares. Toss the squares in more powdered sugar, and serve.
