Ingredients

2 cups lentils ( rinsed )
4 cups water
1/4 cup olive oil
1 red onion ( chopped )
3 garlic cloves ( minced )
2 teaspoons cumin
1 -2 lemon ( juiced-to taste )
1/4 cup parsley ( minced )
salt & freshly ground black pepper
2 tomatoes ( seeded and diced ) ( optional )
10 -15 black olives ( optional )
1/4 cup feta cheese ( optional )
1/2 cup cucumber ( seeded & diced0 ( optional )
Turkish Lentil Salad, also known as Adas Salatasi, is a staple in Turkish cuisine. Instructions

1.Boil the water and lentils together for around 25-30 minutes until soft.
2.Once done, drain and set aside.

4.Add in cumin, salt, and pepper, and stir well.
5.Let it cool and then add the lemon juice.
6.In a large bowl, mix the cooked lentils and cumin mixture.
7.Add in tomatoes, black olives, cucumber, and parsley, and mix gently.
8.Crumble feta cheese on top and serve chilled.
