400 g mozzarella cheese ( cut into 8 slices )
1/3 cup basil leaves ( torn )
1 tablespoon basil leaves ( shredded )
2 tomatoes ( medium finely chopped )
1 red onion ( small thinly sliced )
1 lemon ( cut into wedges to serve )

Instructions

1.Prepare the dough by mixing self-raising flour with 1 cup of warm water in a large bowl until a smooth dough is formed. Knead for a few minutes then cover with a damp cloth and let it rest for 10 minutes.
2.Heat half of the olive oil in a pan over medium heat. Add chopped tomatoes, red onion and shredded basil leaves. Cook for 5 minutes and set aside.
3.Divide the dough into 8 equal balls.
4.Roll out each ball of dough into a thick circle and brush with olive oil.
5.Put one slice of mozzarella cheese on one side of the circle and sprinkle torn basil leaves on top of the cheese.
6.Fold the other side of the circle over the cheese and press the edges together.
7.Cook each Gozleme in the pan, brushing with olive oil, until golden brown on both sides.
8.Serve hot with the tomato and basil filling and a side salad. Squeeze some lemon juice over the salad before serving.
