Ingredients

1 lb extra lean ground beef ( I live in Alberta so I often use extra lean ground bison instead )
1 small onion , minced
1/4 cup long grain rice
2 tablespoons minced fresh parsley
1 egg
1/8 teaspoon ground allspice
salt and pepper
8 cups low sodium chicken broth
2 egg yolks
1 - 1 1/2 lemon , juice of
salt and pepper
chopped parsley ( to garnish )

Instructions

1.In a large bowl, mix together the ground beef, minced onion, long grain rice, minced parsley, egg, allspice, salt, and pepper.
2.Shape the mixture into small meatballs.
3.In a large pot, bring the low sodium chicken broth to a boil. Add the meatballs and cook for 15-20 minutes, or until fully cooked and tender.
4.In a separate bowl, whisk together the egg yolks and lemon juice.
5.Gradually add 1-2 cups of hot broth to the egg yolk mixture, stirring constantly.
6.Slowly add the tempered egg yolk mixture back into the soup, whisking constantly.
7.Season with salt and pepper to taste.
8.Serve hot with a garnish of chopped parsley.
