Ingredients

1 tablespoon olive oil
2 onions
1 leek , sliced ( reserve 1/3rd of it to saute later )
4 garlic cloves , chopped
1 teaspoon allspice
1 teaspoon cinnamon
1 teaspoon honey
2 lbs pumpkin ( or other winter squash , like butternut , acorn , etc . )
4 cups stock ( vegetable or chicken )
salt and pepper
This Turkish Pumpkin Soup is a creamy and comforting dish that's perfect for cooler weather. It's made with pumpkin, allspice, and cinnamon, giving it a slightly sweet and spicy flavor. It's also topped with crispy leeks for added crunch. While this soup may take a bit of time to make, it's definitely worth it in the end. Instructions

1.Heat olive oil in a large pot over medium heat. Add onions and 2/3 of the sliced leek and saute until onions are translucent. Add garlic and saute for 1 minute.
2.Add allspice, cinnamon, and honey and stir.
3.Add 2 pounds of pumpkin, peeled and cubed (or other winter squash like butternut, acorn, etc.) and stir.
4.Add 4 cups of stock (vegetable or chicken) and salt and pepper to taste. Bring to a boil and then reduce to a simmer. Let cook for 30 minutes.
5.In the meantime, saute the remaining 1/3 of the leek in a small pan until crispy.
6.Puree the soup in batches in a blender (or use an immersion blender if you have one). Serve hot with crispy leeks on top.
