Ingredients

2 lbs Japanese eggplants
2/3 cup olive oil
2 cups onions , thinly sliced
3 -4 garlic cloves , peeled and sliced thin
2 cups tomatoes , peeled and sliced
1/2 cup water
1 teaspoon oregano
1 teaspoon sugar
salt and pepper
Imam Baildi, also known as stuffed eggplant or aubergine, is a classic Mediterranean dish that is easy to make and delicious to eat. The dish is made by scooping out the flesh of an eggplant, stuffing it with a mixture of sautéed onions, garlic, tomatoes, and herbs, and then baking it in the oven until the eggplant is tender. Imam Baildi can be eaten as a main or a side dish, and it is often served with rice or bread. The dish is a staple in many Mediterranean countries, including Greece, Turkey, and Lebanon, where it is known as Imam Bayildi.

Instructions

1.Slice the eggplants lengthwise and scoop out most of their flesh, leaving a thin rim of flesh still inside each shell.
2.In a skillet, heat 1/3 cup of olive oil over medium-high heat. Cook each eggplant half for 2 minutes on each side, until they are browned, and then set them aside.
3.In the same skillet, add the remaining olive oil and sauté the onions and garlic over medium heat until they are soft and translucent.
4.Add the tomatoes, oregano, sugar, and water. Mix everything together, then remove the skillet from the heat.
5.Stuff each eggplant shell with this mixture and place them cut side up in a baking dish.
6.Preheat the oven to 375°F and bake the eggplants for 45-50 minutes, until the tops are golden brown and the eggplants are tender. Serve hot or at room temperature.
