2 1/2 lbs celeriac , peeled and cut crosswise into 1/2-inch slices ( celery root )
1 bunch flat leaf parsley , tied tightly together
1/4 cup fresh lemon juice
1 teaspoon salt
2 cups water
1 teaspoon flour
1 tablespoon cold water
1 egg , lightly beaten
2 teaspoons fresh lemon juice
1 tablespoon finely chopped parsley

Instructions

1.In a large pot, bring celeriac slices, tied parsley, 1/4 cup lemon juice, salt, and 2 cups of water to a boil. Cover and simmer for 20 minutes.
2.Remove parsley and discard. In a small bowl, whisk flour and cold water.
3.Gradually whisk the flour mixture into celeriac mixture.
4.Combine egg and 2 teaspoons of lemon juice, and then whisk it into the celeriac mixture.
5.Cook on medium heat, stirring frequently for about three minutes.
6.Sprinkle with chopped parsley and serve warm.
