Ingredients

3/4 cup coconut milk
2 cups water
2 pandan leaves ( knotted )
1/4 of a gingerroot ( Sliced )
1/2 teaspoon salt
3 cups uncooked rice
1/2 a chicken ( skinned )
6 dried red chilies
3 cups water
1 1/2 cloves onions
1 1/2 garlic
1/4 of a gingerroot
1/4 cup oil
1 pinch salt
Nasi Lemak is a traditional Malaysian dish that is commonly found in hawker centers and local restaurants. Often served for breakfast, Nasi Lemak is a dish of fragrant rice cooked with coconut milk and served with a variety of side dishes such as Sambal chicken, fried anchovies, roasted peanuts, cucumber slices and hard-boiled eggs. This is a popular dish enjoyed by many Malaysians and tourists alike. Nasi Lemak remains a national favorite for any meal of the day and is often served at social gatherings and festivities.

Instructions

1.Wash rice and put in rice cooker.
2.Add coconut milk, water, pandan leaves, sliced gingerroot and salt. Stir well and start cooking.
3.Next, season the chicken with a pinch of salt, black pepper and 1 tbsp of oil. Heat up a pan and fry the chicken until it’s golden brown on both sides. Set aside.
4.Grind the dried red chilies, onions and garlic. Use a blender or a grinding stone for this.
5.Heat up 1/4 cup of oil in a pan, add sliced gingerroot and sauté for 1 minute.
6.Then, add in the ground paste and fry until fragrant.
7.Add 3 cups of water and the fried chicken. Cook until the gravy thickens.
8.Serve hot with the Nasi Lemak.
