3 small eggplants
1/2 cup rice vinegar
3 tablespoons sugar

200 g minced chicken
2 teaspoons sugar
2 tablespoons light soya sauce
3 dashes white pepper powder

Instructions

1.Slice the eggplants in half lengthwise, then lay them cut-side down and cut into 3-inch pieces.

3.In a separate bowl, mix minced chicken, 2 teaspoons of sugar, light soya sauce, and white pepper powder together.
4.Coat the eggplant with cornflour.
5.Meanwhile, heat oil in a wok over high heat and fry the chicken until cooked, then set aside.
6.In the same wok, stir fry spring onions and chile for 1-2 minutes.
7.Add the vinegar mixture and bring to boil, then reduce heat and simmer for 2-3 minutes.
8.Add the chicken to the wok, then arrange the eggplant on top in one layer.
9.Cover and steam for 10-12 minutes until the eggplant is tender.
