Ingredients

7 sheets phyllo pastry
2 -3 tablespoons extra virgin olive oil
1/2 cup skim milk
2 medium free range eggs
1 pinch salt
300 g frozen chopped spinach ( drained REALLY well ! )
1/3 cup crumbled feta , good quality
1 brown onion , grated
1 tablespoon extra virgin olive oil
salt & freshly ground black pepper

Instructions

1.Preheat oven to 180°C (350°F).
2.In a mixing bowl, whisk together milk, eggs and salt.
3.Saute onion with olive oil and black pepper in a separate pan for 5-7 minutes over medium heat until it softens.
4.Add the spinach to the pan and cook until the liquid evaporates. Take it off the heat and cool.
5.Grease a 9 x 13 inch baking tray with olive oil and place 2 sheets of phyllo in the tray, lightly brushing each sheet with olive oil
6.Add a layer of spinach mixture over the phyllo, followed by a layer of crumbled feta.
7.Repeat this layering till the spinach mixture and feta cheese are used up. Top with the last two phyllo sheets.
8.Brush the top with a little more olive oil and bake for 35-40 minutes or until golden.
