2 pieces preserved gingerroot or 2 pieces candied ginger
1 tablespoon light soy sauce
1 teaspoon turmeric
1/2 teaspoon salt
1/2 lemon , juice of

Instructions

1.Preheat grill for high heat.
2.Brush pork with olive oil and season with salt and pepper to taste.
3.Grill pork for 10-12 minutes per side until cooked through.
4.In a medium saucepan, combine 1 cup of coconut milk, brown sugar, garlic, onion, water, peanuts, chili peppers, gingerroot, soy sauce, turmeric, salt, and lemon juice. Bring mixture to a boil and reduce heat to medium-low, simmering until mixture has reduced by half. Stir occasionally.
5.Blend mixture in a blender or food processor until smooth. Strain through a mesh sieve to remove any solids.
6.Add remaining 1 cup of coconut milk to the saucepan. Bring mixture to a boil and stir in the peanut sauce. Reduce heat and simmer until sauce has thickened.
