Ingredients

1 1/2 cups long grain rice
2 - 2 1/2 cups chicken stock
1/2 cup coconut milk ( low fat )
5 pandan leaves ( tied into a knot for easy removal )
1 teaspoon garlic powder
1 dash salt
1/4 cup desiccated coconut ( dried flaked coconut )
1 dash turmeric
1 dash black pepper
1 dash ground ginger
1 dash chili flakes
Coconut rice, also known as nasi lemak, is a popular dish in South Asia, especially in Malaysia and Indonesia. It is made by cooking rice with coconut milk, spices and other ingredients. The dish is often served with fried chicken, cucumber, anchovies, peanuts and spicy sambal. Instructions

1.Wash rice until water runs clear.
2.Soak rice for 30 minutes.
3.In a pot, add chicken stock, coconut milk, pandan leaves, garlic powder, salt and turmeric. Bring to a boil.
4.Add the soaked rice and stir well.
5.Reduce heat to a low simmer.
6.Cover and cook for 20 minutes or until rice is done.
7.Once cooked, remove the pandan leaves.
8.In a non-stick pan or wok, roast the dried flaked coconut until golden brown.
9.Add black pepper, ginger and chili flakes and mix well.
10.Serve the rice on a plate and sprinkle the roasted coconut on top. Enjoy!
