Ingredients

3 lbs firm white potatoes
4 ounces dried anchovies ( salted anchovies may be substituted )
3 tablespoons soy sauce
1 tablespoon sugar
2 tablespoons rice wine ( ch'onju , or chinese rice wine may be substituted )
1 tablespoon oil
5 garlic cloves , crushed and chopped finely
6 green onions
1 tablespoon sesame oil
black pepper , to taste
1 tablespoon sesame seeds , roasted

Instructions

1.Peel potatoes, rinse under cold water, and cut into bite-size pieces.
2.Soak dried anchovies in water for 5 minutes to remove excess salt. Drain and cut into small pieces.
3.In a small bowl, mix together soy sauce, sugar, and rice wine until the sugar is dissolved.
4.Heat oil in a large non-stick skillet over medium-high heat. Add garlic and stir-fry until fragrant, about 30 seconds.
5.Add potatoes and stir-fry until lightly browned, about 5 minutes.
6.Add anchovies and continue to stir-fry for another 5 minutes.
7.Pour soy sauce mixture over the potatoes and stir-fry for another 5 minutes or until the potatoes are cooked through.
8.Add green onions, sesame oil, and black pepper to taste. Stir-fry for another minute or until well combined.
9.Transfer to a serving dish and sprinkle with sesame seeds. Serve hot or at room temperature.
