Ingredients

Tamale Filling :
1 1/4 pounds pork loin
1 large onion , halved
1 clove garlic
4 dried California chile pods
2 cups water
1 1/2 teaspoons salt
Tamale Dough :
2 cups masa harina
1 can beef broth
1 teaspoon baking powder
1/2 teaspoon salt
2/3 cup lard
1 package dried corn husks
1 cup sour cream

Instructions

1.In a large pot, combine the pork loin, onion, garlic, dried chile pods, water, and salt. Bring to a boil, then reduce heat and let simmer for 2 to 3 hours until meat is soft.
2.Remove meat from pot and reserve the broth. Shred the meat with a fork.
3.In a large bowl, beat the lard until fluffy. In a separate bowl, combine masa harina, baking powder, and salt. Gradually add the dry ingredients to the lard, alternating with the reserved broth, mixing well until a dough forms.
4.Soak the corn husks in warm water for an hour. Spread each husk with a thin layer of the dough, then add a spoonful of the pork filling and a dollop of sour cream. Roll up the husk and tie the ends with strips of husk.
5.Place the tamales in a steamer and cook on high heat for 1 to 2 hours until the dough is firm and cooked through.
