Instructions

1.In a bowl, mix together the hot cooked rice, rice vinegar, soy sauce and dark sesame oil.
2.Place one sheet of kim fresh seaweed on a cutting board, shiny side down.
3.Spread about three-quarters cup of the rice mixture over the seaweed, leaving a 1-inch border at the top edge and press the rice to create an even layer.
4.Arrange the carrot, beaten eggs, spinach, pickled yellow radishes, and sesame seeds in separate rows, parallel to the bottom edge of the rice.
5.Grab the edge of the seaweed closest to you and roll the seaweed up tightly around the filling, pressing gently as you roll and seal the rice border to the seaweed to seal.
6.Cut the roll into bite-size pieces before serving.
