Ingredients

1 teaspoon cornstarch
8 ounces beef eye round , trimmed and thinly sliced
1 tablespoon low sodium soy sauce
1 1/2 teaspoons minced peeled fresh ginger
2 teaspoons sambal oelek or 2 teaspoons thai chili paste
1/2 teaspoon dark sesame oil
3 garlic cloves , minced
cooking spray
1 package uncooked bean threads ( cellophane noodles )
1 teaspoon dark sesame oil
1 teaspoon vegetable oil
1/2 teaspoon crushed red pepper flakes
5 garlic cloves , minced
3 cups sliced shiitake mushroom caps ( about 6 ounces mushrooms )
1 cup diagonally sliced green onion
1 cup julienne-cut carrot
1 bag fresh spinach
1/3 cup low sodium soy sauce
1 tablespoon brown sugar
1 tablespoon rice vinegar
1 tablespoon dark sesame oil
1 tablespoon sesame seeds , toasted
Chapchae is a traditional Korean dish that has been enjoyed for centuries. It is a stir-fry of sweet potato glass noodles, vegetables, and meat. Instructions

1.In a small bowl, stir together cornstarch and 1 tablespoon soy sauce until well combined.

4.Add the beef and toss well to coat.
5.Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
6.Add beef mixture to the pan and sauté for 4 minutes or until browned.
7.Remove beef from pan.
8.Cook noodles according to package directions, omitting salt and fat.
9.Drain and rinse with cold water, then drain again.
10.Combine 1 teaspoon sesame oil, vegetable oil, crushed red pepper, and 5 minced garlic cloves in the pan.
11.Sauté for 30 seconds or until fragrant.
12.Add mushrooms, green onions, and carrot to the pan.
13.Sauté for 5 minutes or until vegetables are tender.
14.Add spinach to the pan; sauté for 2 minutes or until spinach wilts.
15.Return beef to pan.
16.Combine 1/3 cup soy sauce, brown sugar, and rice vinegar in a small bowl.
17.Pour soy sauce mixture over beef mixture; cook for 2 minutes or until thoroughly heated.
18.Sprinkle with toasted sesame seeds and serve hot.
