Ingredients

3 cups rice
1 cup Urad Dal
1 teaspoon pistachios , blanched
1 tablespoon roasted cashew nuts
1/2 tablespoon green bell pepper , diced
1/2 tablespoon red bell pepper , diced
1 tablespoon pickle masala
1 teaspoon kasuri methi
1 tablespoon carrot , sliced
Stuffed Idlis are a variation of the classic South Indian breakfast dish of soft and fluffy idlis. The traditional idli is made from a batter of mashed rice and urad dal, which is fermented overnight, steamed, and served with chutneys and sambar. The Stuffed Idlis are made by stuffing a mixture of chopped vegetables, spices, and nuts between the batter and steaming them. Instructions

1.Rinse rice and urad dal thoroughly and soak them separately for at least 4 hours.
2.Blend the rice and urad dal together in a grinder to form a smooth batter.
3.Add salt to taste and leave the batter to ferment for 8-10 hours.
4.Take a steamer and grease the idli plates with oil.
5.Fill half of the idli plates with the batter.
6.Mix cashew nuts, pistachios, carrot, green and red bell peppers, pickle masala, and kasuri methi and spoon this mixture over the batter-filled plates.
7.Cover the plates with the remaining batter.
8.Steam the stuffed idlis for 12-15 minutes.
9.Serve the idlis hot with tomato chutney and coconut chutney.
