Ingredients

1 cup almonds , blanched and peeled
5 cups milk
1/2 cup sugar
2 -3 green cardamoms , husk removed and seeds crushed
1 teaspoon saffron

Instructions

1.Soak the blanched and peeled almonds in warm water for 30 minutes and grind them into a smooth paste.
2.In a heavy bottomed saucepan, pour the milk and bring it to a boil.
3.Lower the heat and add the ground almond paste, sugar, crushed cardamom, and saffron to the milk.
4.Stir the mixture continuously to prevent the milk from sticking to the bottom of the pan.
5.Cook the mixture for 15-20 minutes on low heat until it thickens to pudding consistency.
6.Once done, turn off the heat, remove the cardamom pods, and stir the kheer for a few minutes to cool it down.
