Ingredients

3 tablespoons vermicelli or 3 tablespoons spaghetti ( Spaghetti makes the pudding thicker and heavier , I prefer vermicelli )
1 cup skim milk
1/4 cup sweetened condensed milk
1 tablespoon sugar
1 teaspoon ghee or 1 teaspoon butter ( Use ghee for authenticity ! )
1 teaspoon cashews , chopped
1/8 teaspoon saffron ( Only if you can afford it ! : )
Vermicelli pudding is popular in many countries, especially in India where it is known as kheer. This recipe is a take on my mother's traditional recipe that she used to make for us as kids. It is a simple and delicious dessert made with vermicelli noodles and milk, with a hint of saffron for flavor and aroma. You can serve it hot or cold depending on your preference.

Instructions

1.Crush the vermicelli noodles into small pieces.
2.Melt the ghee or butter in a frying pan over medium heat.
3.Add the cashews and vermicelli noodles, and stir fry until light golden brown.
4.In a separate pot, combine the skim milk and condensed milk on low heat.
5.Add the fried vermicelli and cashews to the pot.
6.Add the saffron and sugar to the pot and stir.
7.Cook on low heat until the pudding thickens, approximately 15-20 minutes, stirring regularly.

PROS

This easy-to-make pudding provides a perfect balance of sweetness and creaminess.

The addition of vermicelli noodles provide a unique texture that pairs perfectly with crunchy cashews.
