Ingredients

1 can tomato paste
2 teaspoons garlic salt
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon ground black pepper
1 teaspoon dried oregano
1/4 cup sour cream ( optional )
1/4 cup shredded Cheddar cheese ( optional )

Instructions

4.Heat remaining 1 tablespoon olive oil in another skillet over medium heat and cook onion and bell pepper until onion is translucent, about 5 minutes. Add jalapeno pepper and cook until tender, about 5 minutes more.
5.Combine cooked quinoa, chicken, onion mixture, black beans, salsa, tomato paste, garlic salt, cumin, chili powder, black pepper, and oregano in a large bowl. Pour mixture into a large baking dish.
6.Bake in the preheated oven for 20 minutes. Sprinkle Cheddar cheese over casserole and continue baking until cheese is melted and bubbly, about 5 minutes more.
