Ingredients

1 cup black gram , washed , drained , then soaked in water for 2 hours ( black lentils )
3 cups water
1/2 teaspoon salt
1 teaspoon powdered cumin
1 1/4 cups oil
1 teaspoon chopped green chili
1 clove garlic
2 teaspoons chopped ginger
2 cups plain fat-free yogurt
1 teaspoon sugar
1/2 teaspoon salt
3/4 teaspoon roasted and powdered cumin seed
1/2 teaspoon black rock salt
1 tablespoon oil
1/2 teaspoon black mustard seeds
1 teaspoon chopped fresh coriander leaves
1 pinch red chili powder
1 pinch cumin powder
tamarind chutney ( optional )

Instructions

1.Grind the soaked urad dal with salt and cumin, adding very little water if necessary, to make a smooth batter.

3.Fry the Bhallas until they are golden brown on both sides and drain the excess oil on a kitchen towel.

5.Beat the yogurt with sugar, salt, roasted cumin powder, and black rock salt, and spoon it over the Bhallas.
6.In a small saucepan, heat the oil and add the mustard seeds, chopped green chili, garlic, ginger, and coriander leaves. Fry for 30 seconds, and then spoon this mixture over the yogurt.
7.Sprinkle with red chili powder, roasted cumin powder, and tamarind chutney (optional) and serve chilled.
