Ingredients

2 quarts rich whole milk
3 -4 tablespoons distilled white vinegar
1 3/4 lbs fresh spinach , trimmed , washed , and coarsely chopped
2 tablespoons dried fenugreek leaves ( see recipe description ) ( optional ) or 2 -3 handfuls of fresh fenugreek leaves ( see recipe description ) ( optional )
1 fresh hot green chili pepper , coarsely chopped
1 teaspoon cornmeal
3 tablespoons peanut oil or 3 tablespoons canola oil
1/4 cup onion , finely chopped
1 1/2 by 1-inch fresh ginger , peeled and finely grated to a pulp
1 cup tomatoes , finely chopped
1 1/4 teaspoons salt
1 1/2 - 2 teaspoons ground roasted cumin seeds ( Put a few tablespoons of cumin seeds in a small cast-iron frying pan over medium-high heat , stirred )
1/4 teaspoon cayenne
1/4 teaspoon ground cinnamon

Instructions

1.In a large pot, bring the milk to a boil over high heat.
2.Once the milk has boiled, add the vinegar and stir to combine. Reduce the heat to low and continue to stir for about 30 seconds until the milk begins to curdle and separate into curds and whey. Remove from heat.
3.Pour the mixture through a cheesecloth-lined strainer and rinse the curds with cold water to remove any excess vinegar taste. Squeeze the cheesecloth to remove excess water.
4.Press the curds down into a flat shape between two plates and place a heavy weight on top. Press for 15-20 minutes to remove more excess water.
5.In a food processor, puree the spinach, fenugreek leaves, and chili until smooth.
6.Add the cornmeal to the puree and blend for a few more seconds.
7.In a large skillet over medium-high heat, heat the oil. Add the onion and cook until soft, about 5 minutes. Add the ginger and cook for 1 minute more.
8.Add the tomato and cook until they start to break down and form a sauce, about 5 to 7 minutes. Add the spinach puree, salt, cumin, cayenne, and cinnamon and cook for another 10-15 minutes until thickened.
9.Add the cheese cubes to the skillet and cook for about 5 minutes until they are heated through and coated in the spinach mixture. Serve hot.
