Ingredients

500 g potatoes ( chopped coarsely )
1 tablespoon vegetable oil
1 garlic clove ( crushed or minced )
1 brown onion ( peeled and thinly sliced )
1/2 teaspoon yellow mustard seeds
1 teaspoon garam masala
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon ground turmeric
400 g chopped tomatoes
2 tablespoons sultanas
4 banana peppers ( banana chillies were specified in the recipe 500 grams )
1 lebanese cucumbers ( seeded and chopped finely )
3/4 cup Greek yogurt
6 chapati ( warmed 280 grams )

Instructions

1.Preheat oven to 180°C.
2.Cook chopped potatoes in a saucepan of boiling water until tender. Drain and set aside.
3.Heat oil in a frying pan over medium heat. Add garlic, onion, mustard seeds, garam masala, coriander, cumin, chili powder, turmeric and cook for 2–3 minutes or until the onion softens.
4.Add the chopped tomatoes and sultanas to the pan and cook until the mixture has thickened, stirring occasionally.
5.Remove the stalk from the banana peppers and slice down lengthways, removing any seeds if desired.
6.Fill the peppers with the potato masala mixture and place them on an oven-safe tray.
7.Bake for 15 minutes, or until the peppers have softened but still hold their shape.
8.Combine finely chopped cucumber and Greek yogurt in a bowl and serve with the pepper.
9.Serve hot with chapati.
