2 tablespoons ghee ( clarified butter )
4 dried red chilies
1 tablespoon fresh ginger , finely chopped
2 green chilies , split
600 g spinach
1 teaspoon sugar
salt
2 tablespoons cream
fresh coriander , finely chopped , to garnish ( optional )

Instructions

1.Wash and clean spinach leaves under running water.
2.Heat ghee in a pan, add dried red chilies, ginger and green chilies.
3.Saute for a minute.
4.Add spinach leaves along with salt and sugar.
5.Mix the ingredients and cover the dish
6.Cook on medium flame, stirring occasionally until spinach leaves are tender and soft
7.Add cream and stir well
8.Cook again on low flame for 2-3 minutes
9.Add fresh coriander leaves, put the lid on and leave it for 1 minute to let the flavors meld
10.Serve hot and enjoy!
