Ingredients

3 1/3 lbs mangoes , chopped
4 teaspoons garlic
salt
3 tablespoons chili powder
2 tablespoons cumin powder
1 tablespoon cround coriander
3 tablespoons masala ( or curry powder )
1 1/2 cups honey ( agave ok )
1/2 cup cornflour ( or potato )
2 tablespoons mustard seeds
curry leaf , handfull ( if you can find them , I have a curry leaf tree )
1 1/2 cups olive oil

Instructions

1.In a large mixing bowl, combine the chopped mangoes, garlic and salt. Mix well.

4.After an hour, add honey or agave to the mixture and stir it well. Then, mix in the cornflour or potato flour.
5.In a separate pot, heat up the olive oil. Add mustard seeds and allow them to pop. Then add the curry leaves and turn off the heat.
6.Pour the oil mixture over the mango mixture and mix thoroughly. Allow the mixture to sit for at least a day before eating.
