Instructions

1.In a skillet, heat up the oil over medium heat.
2.Once the oil is hot, add cumin seeds and asafoetida powder. Fry for about 10 seconds until the cumin seeds turn brown.
3.Add the diced tomatoes and fry for 2 minutes until the tomatoes start to soften.
4.Now add diced potatoes, turmeric powder, chili powder, coriander powder, and salt. Stir well, making sure the potatoes and tomatoes are well coated with the spice mixture.
5.Pour in 1 cup of water, then cover the skillet and let it simmer for 10-15 minutes or until the potatoes are tender.
6.Once the potatoes are cooked, add garam masala and the shredded Chinese mushrooms. Mix well and cook for another 2-3 minutes.
