Ingredients

1 1/2 liters water
1 cup sugar ( or to taste )
1 tablespoon almonds
1 tablespoon sunflower seeds , raw , hulled
1/2 tablespoon poppy seed
1/2 tablespoon anise seed
1/2 teaspoon ground cardamom
1 teaspoon rose water ( optional ) or 1 teaspoon orange flower water ( optional )
1 teaspoon peppercorn
1/4 cup rose petal , organic ( optional )
Thandai is a popular drink in North India, especially during the Holi festival. Instructions

1.In a blender, pulse together almonds, sunflower seeds, poppy seeds, anise seeds, peppercorns, and rose petals until a fine powder is formed.
2.Add 500 ml of water to the blender and blend again for 5 minutes.
3.Strain the mixture through a fine-mesh sieve into a jug.
4.Add sugar, cardamom powder, rose water or orange flower water, and remaining water in the jug. Stir well.
5.Chill the Thandai in the refrigerator for at least 1 hour before serving.
6.Pour in glasses and sprinkle with rose petals or almond slices before serving.
